A quick, simple and delicious recipe to make your own vegan mincemeat. Perfect for all of your festive baking needs!

Ingredients
180g dried berries (I used sour cherries and blueberries)
4 dried apricots
½ an apple
Zest and ½ the juice of an organic/unwaxed orange
½ tsp mixed spice
3 tbsp (45ml) brandy
Method
Chop the apple and apricot into small pieces (about the same size as the dried berries) and place in a mixing bowl.
Add the rest of the ingredients to the mixing bowl and stir until combined.
Store in a sterilised 500ml jar for at least three days before using. Turn/shake occasionally to mix the ingredients.
Notes
I like to keep the dried berries whole, but feel free to chop them if you want a more traditional texture. I've used dried berries because I like the flavour and they come without added oil, however this recipe will work just as well with sultanas etc.
