It's easy to make your own vegan wings at home! These Sticky Chilli Cauliflower Wings are sweet and spicy, sticky, crunchy and delicious!

  • Wings:
  • 1 medium cauliflower
  • Batter:
  • 6 tbsp water
  • 4 tbsp gram flour
  • 2 tsp smoked paprika
  • 1 tsp cayenne pepper
  • Salt & Pepper, to taste
  • Chilli Orange Sauce:
  • 1 orange, juice & zest (ensure organic/unwaxed for zest)
  • 1 tbsp chilli sauce (I use Cholula)
  • 2 medjool dates
  • 2 garlic cloves, minced
  • 1 tbsp good soy sauce
  1. Heat the oven to 200°C / 400°F / Gas Mark 6.
  2. Cut the cauliflower into bite-size florets.
  3. Combine the batter ingredients in a mixing bowl. You want it to be quite thick to stick to the cauliflower, so adjust with flour and water until you have a consistency you're happy with.
  4. Line a baking tray with parchment paper or a silicone mat.
  5. Dip each floret into the batter, coat completely, allow any excess to drip off then place on the tray.
  6. Cook in the oven for 20 minutes.
  7. While the wings are cooking, make the sauce. Put all the sauce ingredients in a saucepan and cook on a medium heat on the hob for about 12 minutes. Use a potato masher to break down the dates as it's cooking. You want to end up a thick, sticky sauce.
  8. After the wings have cooked for 20 minutes, remove them from the oven. Carefully tip them into the sauce and gently mix until they are all coated. Put them back on the oven tray using a spoon and return to the oven for 5 more minutes.
